Inventory of the Food Heritage of Ecuador

Technical collaborators of the research project Inventory of the food heritage of Ecuador - Amazon Region, by the Ministry of Culture and Heritage of Ecuador. This research highlights the vast biological and cultural diversity of the Amazon region, including the names of products in the different native languages ​​of the country’s Amazonian nationalities. This research demonstrates the enormous gastronomic potential of the region, and is a call to action to protect and promote local food heritage.

The information resulting from this research is archived in the Ministry of Culture and Heritage of Ecuador, but we are in the process of obtaining permission (from the MCYP) and resources to be able to publish this work.
